While non-dairy frozen desserts may still occupy a niche space in many markets—particularly in the U.S.—their staying power and steady global innovation point to a broader role in the future of food. This month’s global round-up of product launches highlights that evolution, with inventive formats and ingredients (hello, potato-based frozen dessert!) that continue to push the boundaries of what dairy-free can be.
One standout innovation emerged from a unique collaboration between boxing legend Mike Tyson and Mr. Charlie’s Told Me So—a potato-based frozen dessert that playfully nods to Tyson’s infamous match with Evander Holyfield.

Flowering Ice Cream from Ajinomoto Co. and Solar Foods! (Singapore)

Leading Japanese multinational food and biotechnology company Ajinomoto Co., Inc. and Finnish startup Solar Foods launched Flowering Ice Cream—using the first and only food truck concept by new brand Atlr. 72! The brand, launched last year by Ajinomoto Co., offers healthy, environmentally conscious products that reduce the use of animal ingredients.
Each cup of the brand’s ice cream was beautifully decorated with colorful 3D cookies shaped like flowers and birds, conveying the message of leaving a beautiful nature and planet for the future. The bright yellow color of the ice cream comes from the natural carotenoids found in Solein, a Finnish protein made using electricity and CO2.
From March 28 to April 16, the Atlr. 72 food truck was available at various locations in Singapore, serving three flavors of its Flowering Ice Cream for SGD 7 (USD 5.35) for a single scoop or SGD 13 (USD 9.94) for a double scoop.
The two non-dairy debuts include:
Chocolate with Lemon Peel: Coconut milk and lemon zest bits combine, providing a rich yet refreshing taste
Salty Caramel with Nuts: Macadamia nuts, caramel, and a pinch of salt enhance an oat milk base
They join one dairy-based flavor.
Additional locations for this unique pop-up will be announced in the future!
